Cookin' With The Sharehouse

At The Collective Sharehouse food bank we encourage people to cook for themselves, using simple recipes with healthy ingredients, without the need for expensive facilities and equipment.

See below for:

- Chickpea and Peach Curry
- Tuna Pasta Bake

Chickpea and Peach Curry

Great served with rice and/or bread

250g tin chickpeas

400g tin peaches (or mandarins or apricots)

400g tin chopped tomatoes

1 stock cube (veg or chicken)

1 onion

1 rounded tspn curry powder

Splash of oil


Optional:


Clove of garlic

1 chilli

A handful of fresh coriander


- Drain the chickpeas and rinse.

- Put them in saucepan with water and boil rapidly for 10 mins.

- Meanwhile, peel and chop onion finely. + garlic & chilli, if using.

- Pour a little oil into frying pan (or other pan) and gently cook onion on low heat.

- Add the curry powder and stir well.

- Drain the peaches (keep the juice) and chop into small pieces.

- Add peaches and juice to the pan and stir well.

- Add the tomatoes and the drained chickpeas + chopped coriander, if using.

- Add the crumbled stock cube.

- Stir everything together.

- Cook for 30 minutes.


Stir well, serve and enjoy!



Tuna Pasta Bake

Any Veggies including chopped onion

(why not do a bottom of the fridge round up?)

Tin tomatoes or any tomato based sauce

Tin tuna

Small tin sweetcorn

Mixed herbs

Splash of oil

Pasta e.g. penne


Optional extras: garlic, paprika, grated cheese or cheesy sauce for topping


- Pre-heat oven to 200*C.

- Start to cook pasta in 1 pan.

- At same time, in another pan, cook the chopped onion (and other veg, if using) in splash of oil until soft.

- Add tin tomatoes or other tomato based sauce + good pinch of herbs (+ crushed garlic/paprika if using). 

- Add the tuna + sweetcorn to the sauce and warm through.

- Drain the pasta and add the tuna sauce mix and stir well.

Serve and enjoy at this stage if you wish!


OR

- Bake in oven…

- Place in oven proof dish, add grated cheese (if you wish) or even a cheesy sauce!
